Today, a cookbook entitled “Reader’s Digest Great Recipes for Good Health” caught my eye — no doubt due to the fact that I haven’t cooked or eaten a low calorie dish in weeks! My mom used this book a lot when I was a kid, and she recently gave it to me. After all of that holiday food, I wanted a side dish that was easy to make, healthy, and tasty, so I decided to give the “Low Calorie Oven French Fries” a shot. After all, homemade fries are the absolute best, but they taste even better when they are good for you too!

The recipe couldn’t be easier, but the results were completely satisfying.
Recipe:
2 Large Potatoes peeled and cut lengthwise into 8 wedges
2 1/2 tsp. olive oil
1 Tbsp. vinegar (I used regular vinegar, but red wine vinegar also works)
1/4 tsp. salt
To bake, preheat your oven to 375 degrees. Then, place the sliced potatoes on a cookie sheet, and sprinkle them with half of the olive oil. Next, pop the pan into the oven for ten minutes. After ten minutes, turn the potatoes, and add the remainder of the olive oil. When the potatoes are brown and soft, remove them from the oven. Place the potatoes in a bowl, toss with vinegar, add a pinch of salt (optional), and serve.
Approximate Calories: 93 (per serving — recipes serves 4)
Total Fat: 3g
Carbs: 15g
These potatoes don’t have any saturated fat or other bad fats, but they are packed with flavor. When you want a simple side dish, these potatoes won’t disappoint (and they won’t pack on the weight either!). I have a feeling that this week will be full of healthy recipes…now, where did I put all of those healthy cookbooks?

One of my faves – I cooked these twice a day in college, but more because it was cheaper than buying the frozen kind and the one time I used my deep fryer, my apartment didn’t stop smelling like grease for the entire time I lived there.
Nothing like the smell of grease hanging in the air! Did you ever attempt frying any packaged sweets? I hear that deep fried Twinkies are something entirely unique, though the thought is slightly repulsive. I was thinking about boiling down some balsamic vinegar next time in order to make a syrupy reduction to pour over the fries. I wonder what else people add to oven baked fries aside from the usual condiments?
Oh man – I know you mentioned this like 10 days ago, but in Western Pennsylvania, they’ll use any holiday as an excuse to deep fry a Twinkie or an Oreo and sell it from a tent downtown. The fact that I remain alive and heartattack-free is proof that I’ve yet to try one, though.
